Persimmon & Honey Goat Cheese Crostini
Ingredients:
- French bread, sliced
- 3 tbsp. butter, melted
- ½ tsp. cinnamon
- 2-3 tbsp. honey
- 1 tsp. fresh thyme, chopped
- 8 oz. goat cheese
- 2 persimmons, sliced
- ¼ cup pumpkin seeds
- Honey, for drizzling
- Thyme, for topping
Directions:
- Brush bread slices with melted butter and bake at 400 degrees for approximately 10 minutes, turning half way through.
- Combine cinnamon, honey, thyme and room-temperature goat cheese and stir to combine. Taste and adjust sweetness as needed.
- Spread on cooled bread slices and top with persimmon slices, pumpkin seeds, and drizzle with honey. Sprinkle with more fresh thyme if desired.
